Purebread started in the Whisler village and expanded to the Vancouver Gastown sometime around 2016s. In 2018, they have expanded new locations to Mount Pleasant and Kitsilano. This bakery franchise offers large variety of baked goods that changes daily. They use high-quality ingredients and make everything from scratch. I get excited when seeing their display every time I come to this Purebread location on West Hastings near Cambie Street right across from Victory Square in Downtown Vancouver.

Located inside a heritage building
Purebread in Gastown in a heritage building. You can see characters of older building such as the recessed entry and with decorative floor tiles. The storefront has a large transparent area that attracted us in the first place.
Line up against baked goods display
The inside has a long and narrow display and corridor that is always packed with customers. There are staffs along the way to help. The cash register is located further down, which helped to herd customers through and allow more customers to see the product and make decisions in the line.
Overwhelming Variety of Products
We entered and was shocked by the wide variety of baked goods to choose from. They all looked very fresh and delicious so it was a hard decision on which one to order. We eventually settled for a simple butter croissant and a Peach Rosemary Tart.
Drink Menu was near the cash registry
As we made our way to the end, there was the drink menu hung from the wall. We ordered a latte. It has rich flavour from espresso and the steamed milk gave it a little sweetness.
Convenience table with Rustic decor
The convenience table is right across from the cash register. You can find everything you need in your coffee includes honey and straws. On the side of the table is the tray return area. The staffs are quite busy to tend to this area, so the return area often gets full.
Peach Rosemary Tart
The peach rosemary tart has peaches layered on top of puff pastry. There is some icing sugar around the peach for decoration. The peach has good acidity and the sweet cream is where the majority of the sweetness comes from.
Butter Croissant
The butter croissant is not comparable to Le Marché St. George but costs a little more. There is no crunchy exterior or a puffed-up structure. It seems like it was baked a while ago.
Butter croissant is too soft
I took a picture of the inside. Even though there is evidence of good air pockets, it is now pretty flat. All things considered, this is a pretty good butter croissant because it tastes very buttery. I think the croissant would taste much better if I come here right when Purebread open.
604 Food Critic Assessment
Purebread has a very solid presentation. Everything looked very good and was tightly placed together. I have not walked into a bakery that I was unable to make my decisions like in Purebread. The baked goods were made early in the morning, so some of the items may be a bit stale. I would recommend re-heating with a small convection oven at home before enjoying them.
